New Discount Grocery Store Coming To Edina

A new store is going up in Edina.

Dana and Alma Shirk have begun work on Edina’s new discount grocery store with the help of Lengacher Construction based in Keosauqua, IA.

The new store is under construction at 1207 East Lafayette located on Highway 6 east of the Assembly of God Church.

Discount groceries, local produce, bulk foods and a deli will be featured at the new store.

The Shirk’s owned a similar store in Versailles, MO, which they built and operated for nearly six years before moving to Knox County with their five children, ages 12, 10, 8, 6 and 4.

Dana and Alma have been living in the Bee Ridge area of Knox County for approximately three years. Many citizens may know them from their produce stand at the Knox County Farmer’s Market. The Shirk’s have sold their locally grown produce at the KCFM for the last two years.

“We are still growing produce and looking to source some of that out to local families. With all of the building going on, we will not be able to grow as much this year. We are still trying to have Knox County grown produce,” said Shirk.

The Shirk’s have set a target opening of late May to early June.

“We are doing it as fast as we can,” said Dana Shirk.

A name for the new store is still in the process of being chosen.
